Ingredients

- 1 lb (450 g) boneless, skinless chicken breast, sliced
- 2 cups (300 g) mixed vegetables (bell peppers, broccoli, and snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat sesame oil in a large skillet over medium-high heat.
- Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
- Stir in the ginger and garlic; cook for another minute.
- Add the mixed vegetables and cook for an additional 5 minutes until tender-crisp.
- In a small bowl, mix soy sauce, cornstarch, and water; add to the skillet and stir well.
- Cook for another 2-3 minutes until the sauce thickens. Season with salt and pepper.
- Serve over cooked rice.
Notes
- For a spicier kick, add red pepper flakes.
- Feel free to substitute with your favorite vegetables.
