Ingredients

- 2 cups cooked chicken, shredded (280 g)
- 1 cup shredded cheese (120 g)
- 4 large flour tortillas
- 1/2 cup diced bell peppers (75 g)
- 1/2 cup diced onions (75 g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix the shredded chicken, cheese, bell peppers, onions, taco seasoning, olive oil, salt, and pepper.
- Place a tortilla on a clean surface and add a generous amount of the chicken mixture. Fold the tortilla in half.
- Repeat with remaining tortillas and filling.
- Lightly spray the air fryer basket with cooking spray and arrange the quesadillas inside, not overlapping.
- Cook in the air fryer for 10 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the air fryer, cut into wedges and serve with salsa or sour cream.
Notes
- For extra flavor, add some jalapeños to the filling.
- Leftover quesadillas can be stored in an airtight container in the fridge for up to 2 days.
