Ingredients

- 1 lb (450 g) chicken breast, cut into bite-sized pieces
- 1 cup (200 g) long-grain rice
- 2 cups (480 ml) chicken broth
- 1 bell pepper, sliced
- 1 cup (150 g) broccoli florets
- 2 tablespoons (30 ml) soy sauce
- 1 tablespoon (15 ml) olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 380°F (193°C).
- In a bowl, mix the chicken pieces with olive oil, garlic powder, onion powder, salt, and pepper.
- Add the chicken to the air fryer basket and cook for about 10-12 minutes, shaking halfway through.
- Meanwhile, cook the rice in chicken broth according to package instructions.
- In the last 5 minutes of chicken cooking, add bell pepper and broccoli to the air fryer.
- Once everything is cooked, serve the chicken and veggies over the rice and drizzle with soy sauce.
Notes
- For added flavor, marinate the chicken overnight.
- Feel free to use any vegetables you have on hand.
