- 1 cup (100 g) shredded coconut
- 1 cup (100 g) panko breadcrumbs
- 1/2 cup (65 g) all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- Cooking spray
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix flour, garlic powder, paprika, salt, and pepper.
- In another bowl, beat the eggs.
- In a third bowl, combine shredded coconut and panko breadcrumbs.
- Dip each shrimp first in the flour mixture, then the egg, and finally coat with the coconut mixture.
- Place the shrimp in a single layer in the air fryer basket and spray lightly with cooking spray.
- Air fry for 10-12 minutes, flipping halfway, until golden brown and crispy.
- Serve warm with sweet chili sauce.
Notes
- For extra flavor, marinate the shrimp for 30 minutes before coating.
- Adjust the cooking time based on the size of your shrimp.
