- 4 medium zucchinis
- 1 lb (450 g) ground beef
- 1 cup (100 g) diced tomatoes
- 1/2 cup (50 g) onion, diced
- 1 cup (100 g) shredded cheddar cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the air fryer to 380°F (193°C).
- Slice the zucchinis in half lengthwise and scoop out the seeds to create boats.
- In a skillet over medium heat, cook the ground beef and onion until browned, about 5-7 minutes.
- Add garlic, diced tomatoes, Italian seasoning, salt, and pepper to the beef mixture. Cook for an additional 2-3 minutes.
- Stuff the zucchini boats with the beef mixture.
- Spray the air fryer basket with cooking spray and place the stuffed zucchini in the basket.
- Air fry for 12-15 minutes or until zucchinis are tender.
- Sprinkle with shredded cheddar cheese and air fry for an additional 3 minutes until cheese is melted.
Notes
- For added flavor, consider topping the boats with fresh herbs.
- Make this dish ahead of time and reheat in the air fryer for a quick meal.
