- 4 large bell peppers
- 1 lb (450 g) ground beef
- 1 cup (200 g) cooked rice
- 1 cup (100 g) shredded cheese
- 1 can (14 oz or 400 g) diced tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil, sauté onions and garlic until soft, then add ground beef, cooking until browned.
- Stir in cooked rice, diced tomatoes, chili powder, salt, and pepper; mix thoroughly.
- Stuff each bell pepper with the beef and rice mixture, then top with shredded cheese.
- Place peppers in a baking dish and cover with foil.
- Bake for 20 minutes, removing foil for the last 5 minutes to brown the cheese.
- Let cool slightly before serving.

- Feel free to use ground turkey for a leaner option.
