- 3 lbs (1.4 kg) beef chuck roast
- 2 tablespoons olive oil
- 1 cup (240 ml) beef broth
- 1 cup (150 g) carrots, chopped
- 1 cup (150 g) potatoes, chopped
- 1 cup (150 g) onion, sliced
- 3 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat the oven to 325°F (160°C).
- Season the beef chuck roast with salt, pepper, thyme, and rosemary.
- In a large oven-safe pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
- Add the garlic, onions, carrots, and potatoes to the pot, stirring to combine.
- Pour in the beef broth, cover the pot, and transfer it to the preheated oven.
- Cook for 3-4 hours, or until the beef is tender.
- Remove from oven, let rest for 10 minutes before slicing, and serve with veggies.
Notes
- For extra flavor, add a splash of red wine to the broth.
- Leftovers can be stored in the refrigerator for up to 3 days.
