- 1 lb (450 g) boneless chicken breast, diced
- 4 cups (1 L) chicken broth
- 1 medium onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup (150 g) frozen peas
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and sauté until softened, about 5 minutes.
- Add the garlic, thyme, and parsley; cook for another minute until fragrant.
- Stir in the diced chicken and cook until lightly browned, about 5 minutes.
- Pour in the chicken broth and bring to a boil. Reduce heat and let simmer for 10 minutes.
- Add the frozen peas and simmer for an additional 5 minutes. Season with salt, pepper, and lemon juice before serving.
