- 8 oz (225 g) spaghetti
- 4 slices of bacon, chopped
- 2 large eggs
- 1/2 cup (50 g) grated parmesan cheese
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Cook the spaghetti according to package instructions in salted water until al dente.
- In a skillet, cook the chopped bacon over medium heat until crispy. Add minced garlic and sauté for 1 minute.
- In a bowl, whisk together eggs and parmesan. Add a pinch of salt and black pepper.
- Once spaghetti is cooked, reserve 1 cup of pasta water and drain the rest.
- Add hot spaghetti to the skillet with bacon and garlic, tossing to combine.
- Remove from heat and quickly stir in the egg and cheese mixture, adding reserved pasta water as needed to create a creamy sauce.
- Garnish with parsley if desired and serve immediately.
Notes
- Use guanciale for a traditional Italian flavor.
- For extra creaminess, add a splash of heavy cream.
