- 1 medium head of cauliflower, chopped
- 1 tablespoon olive oil
- 4 cloves garlic, roasted
- 1 small onion, diced
- 4 cups vegetable broth (960 ml)
- 1 cup heavy cream (240 ml)
- 1 teaspoon nutmeg
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss cauliflower florets with olive oil, salt, and pepper, and spread them on a baking sheet.
- Roast in the oven for 25 minutes until golden and tender.
- In a large pot, sauté diced onion until translucent.
- Add roasted garlic and cauliflower, then pour in the vegetable broth.
- Bring to a simmer, then blend until smooth.
- Stir in heavy cream and nutmeg, then adjust seasoning.
- Serve warm, garnished with fresh chives.
Notes
- For a vegan version, substitute heavy cream with coconut milk.
- Store leftovers in an airtight container for up to 3 days.
