- 2 cups cooked shredded chicken
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 can (4 oz) diced green chiles
- 8 small flour tortillas
- 1 cup enchilada sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cooked chicken, cream of chicken soup, sour cream, half of the cheddar cheese, green chiles, garlic powder, onion powder, salt, and pepper.
- Lay out the tortillas and fill each with the chicken mixture. Roll them up and place seam side down in a greased baking dish.
- Pour the enchilada sauce over the top and sprinkle with the remaining cheddar cheese.
- Bake for 20 minutes until bubbly and golden.
Notes
- For a spicier version, add jalapeños to the filling.
- These enchiladas can be made ahead of time and stored in the fridge before baking.
