- 2 cups (470 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1 lb (450 g) cooked chicken, shredded
- 2 cups (300 g) gnocchi
- 1 cup (150 g) carrots, diced
- 1 cup (150 g) celery, diced
- 1 cup (150 g) spinach, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons (30 ml) olive oil
- 1 teaspoon (5 g) Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, sautéing for about 5 minutes until vegetables are tender.
- Add garlic and Italian seasoning, cooking for another minute until fragrant.
- Pour in chicken broth and bring to a boil.
- Add gnocchi and cook according to package instructions, usually about 3-4 minutes.
- Stir in the shredded chicken, heavy cream, and spinach, and cook until heated through, about 2-3 minutes.
- Season with salt and pepper to taste before serving.
Notes
- For a lighter version, substitute heavy cream with half-and-half.
- Feel free to use frozen gnocchi if fresh is unavailable.
