- 1 lb (450 g) boneless, skinless chicken breasts
- 1 cup (150 g) orzo pasta
- 4 cups (1 L) chicken broth
- 1 cup (240 ml) heavy cream
- 2 cups (30 g) fresh spinach
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons (30 ml) olive oil
- Salt and pepper to taste
- 1 teaspoon (5 g) dried thyme
- 1 tablespoon (15 ml) lemon juice
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Add the chicken breasts and cook until browned, about 5-6 minutes per side.
- Remove chicken, shred it, and return it to the pot.
- Stir in the chicken broth, orzo, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for 10 minutes, or until orzo is tender.
- Stir in the heavy cream and spinach. Cook until spinach wilts.
- Finish with lemon juice and adjust seasoning to taste.
Notes
- You can add vegetables like carrots or celery for extra flavor.
- This soup freezes well; just add fresh spinach when reheating.
