- 12 oz (340 g) spaghetti
- 4 oz (115 g) bacon, diced
- 2 large eggs
- 1 cup (240 ml) heavy cream
- 1/2 cup (50 g) grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the spaghetti according to package instructions in salted water until al dente, then drain.
- In a large skillet, cook the diced bacon over medium heat until crispy. Add the minced garlic and sauté for about 1 minute.
- In a bowl, whisk together the eggs, heavy cream, and Parmesan cheese. Season with salt and pepper.
- Add the drained spaghetti to the skillet with bacon and garlic, and remove from heat. Quickly pour the egg mixture over the pasta, tossing to coat evenly.
- Serve immediately, garnished with fresh parsley and extra Parmesan if desired.
Notes
- For a richer flavor, use pancetta instead of bacon.
- Make sure to mix the egg mixture off the heat to avoid scrambling the eggs.
