- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 can (28 oz / 800 g) crushed tomatoes
- 2 cups chicken or vegetable broth (500 ml)
- 1 cup heavy cream (240 ml)
- 1 cup fresh basil leaves, chopped
- Salt and pepper to taste
- 1 teaspoon sugar (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the crushed tomatoes and broth, and bring to a simmer. Cook for 10 minutes.
- Add the heavy cream and chopped basil, and stir until combined. Simmer for another 5-7 minutes.
- Season with salt, pepper, and sugar if desired. Blend with an immersion blender until smooth.
- Serve hot, garnished with additional basil if desired.
Notes
- For a spicier version, add a pinch of red pepper flakes.
- Pair with grilled cheese sandwiches for a comforting meal.
