Ingredients

- 14 oz (400 g) firm tofu, pressed and cubed
- 2 cups (300 g) bell peppers, sliced
- 1 cup (150 g) broccoli florets
- 1 cup (150 g) snap peas
- 1 medium carrot, julienned
- 3 tablespoons (45 ml) soy sauce
- 2 tablespoons (30 ml) olive oil
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) ginger, grated
- 1 tablespoon (15 ml) sesame oil
- Cooked rice or noodles for serving
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add cubed tofu and sauté until golden brown on all sides, about 5-7 minutes.
- Stir in garlic and ginger, cooking for an additional minute.
- Add the bell peppers, broccoli, snap peas, and carrots; stir-fry for about 5 minutes until vegetables are tender-crisp.
- Pour in soy sauce and sesame oil; stir well to combine and heat through.
- Serve hot over rice or noodles.
Notes
- Feel free to add any other vegetables you enjoy.
- For a spicier version, add red pepper flakes or sliced chili.
