- 1 lb (450 g) beef chuck, cut into 1-inch cubes
- 8 oz (225 g) mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups (480 ml) beef broth
- 1 cup (240 ml) red wine
- 2 tablespoons (30 ml) olive oil
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium-high heat. Add beef cubes and brown on all sides.
- Add chopped onion and garlic, sauté until onions are translucent.
- Stir in mushrooms, carrots, and potatoes, cooking for an additional 5 minutes.
- Pour in beef broth and red wine, then add thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes or until beef is tender.
- Remove bay leaf and serve warm.
Notes
- For extra flavor, let the stew marinate in the fridge overnight before cooking.
- Serve with crusty bread to soak up the delicious sauce.
