- 1 lb (450 g) beef stew meat, cut into 1-inch cubes
- 4 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups (960 ml) beef broth
- 2 tablespoons (30 ml) tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons (30 ml) vegetable oil
Instructions
- In a large pot, heat vegetable oil over medium-high heat. Add the beef cubes and brown on all sides.
- Add the chopped onion and minced garlic, sautéing until softened.
- Stir in the tomato paste, then add the beef broth, potatoes, and carrots.
- Season with thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until the beef and vegetables are tender.
Notes
- For extra flavor, marinate the beef in your favorite spices for a few hours before cooking.
- This stew can be prepared a day in advance and reheated for better flavor.
