Ingredients

- 4 pork chops (about 1 lb / 450 g)
- 1 can cream of mushroom soup (10.5 oz / 300 g)
- 1 cup rice (uncooked)
- 1 cup chicken broth (240 ml)
- 1 onion, chopped
- 2 cups mixed vegetables (frozen or fresh)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and brown the pork chops on both sides.
- In a baking dish, combine the cream of mushroom soup, rice, chicken broth, onion, mixed vegetables, garlic powder, salt, and pepper.
- Place the browned pork chops on top of the mixture in the baking dish.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, until the pork chops are cooked through and the rice is tender.
Notes
- For added flavor, you can sprinkle some cheese on top before the last 10 minutes of baking.
- Feel free to substitute the mixed vegetables with your favorites, like broccoli or bell peppers.
