- 2 cups cooked jasmine rice (300 g)
- 1 lb (450 g) shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, corn) (150 g)
- 2 tablespoons soy sauce (30 ml)
- 2 tablespoons vegetable oil (30 ml)
- 2 green onions, chopped
- 2 eggs, beaten
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
- Add shrimp and cook for 2-3 minutes until pink, then remove from the skillet.
- In the same skillet, add the remaining oil, garlic, and mixed vegetables. Sauté for 3-4 minutes.
- Push the veggies to one side, add the beaten eggs to the other side, and scramble until cooked.
- Mix in the cooked rice, shrimp, soy sauce, and green onions. Stir-fry for 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- Use day-old rice for best texture.
- Add sesame oil for extra flavor.
