- 4 large eggs
- 2 English muffins, split
- 4 slices of Canadian bacon
- 1 tablespoon of white vinegar
- 1 stick (113 g) of unsalted butter
- 2 large egg yolks
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions
- Bring a pot of water to a gentle simmer and add white vinegar.
- Poach the eggs for 3-4 minutes until the whites are set.
- While eggs are cooking, toast the English muffins and heat the Canadian bacon in a pan.
- In a heatproof bowl, whisk together egg yolks, lemon juice, and a pinch of salt. Place over a pot of simmering water and whisk in melted butter until creamy.
- To assemble, place Canadian bacon on each muffin half, add a poached egg, and drizzle with hollandaise sauce.
- Serve immediately and enjoy!
Notes
- Use fresh eggs for the best poaching results.
- If you like it spicier, try adding a dash of hot sauce to the hollandaise.
