- 1 lb (450 g) chicken breast, diced
- 2 cups (300 g) broccoli florets
- 1 cup (150 g) brown rice
- 1 red bell pepper, sliced
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix chicken, olive oil, garlic powder, salt, and pepper.
- Spread the chicken on a baking sheet and roast for 15 minutes.
- Meanwhile, cook brown rice according to package instructions.
- Add broccoli and bell pepper to the chicken, then roast for an additional 5 minutes.
- Once everything is cooked, assemble your meal prep bowls with rice on the bottom, followed by chicken and vegetables.
- Garnish with fresh parsley and let cool before sealing in containers.
