- 4 ears of fresh corn, husked
- 1/2 cup (120 g) cherry tomatoes, halved
- 1/4 cup (60 g) red onion, finely chopped
- 1/2 cup (120 g) cotija cheese, crumbled
- 1/4 cup (60 ml) mayonnaise
- 2 tablespoons (30 ml) lime juice
- 1 teaspoon (5 g) chili powder
- Salt and pepper to taste
- 2 tablespoons (30 g) fresh cilantro, chopped
Instructions
- Preheat the grill to medium heat. Cook the corn on the grill for about 10-15 minutes, turning occasionally, until charred and tender.
- Once the corn has cooled, cut the kernels off the cob and place them in a large mixing bowl.
- Add cherry tomatoes, red onion, cotija cheese, mayonnaise, lime juice, chili powder, salt, and pepper to the bowl. Mix well until combined.
- Garnish with fresh cilantro before serving. Enjoy your street corn salad chilled or at room temperature!
Notes
- For a spicier salad, add diced jalapeños.
- This salad can be made a few hours in advance and stored in the refrigerator.
