- 1 cup (240 ml) unsweetened almond milk

- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup (150 g) spinach, fresh
- 1/2 cup (50 g) grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add vegetable broth, almond milk, and cornstarch; whisk until combined.
- Stir in Italian seasoning, salt, and pepper. Bring to a simmer.
- Add spinach and cooked pasta, tossing gently until heated through.
- If desired, stir in Parmesan cheese before serving. Enjoy!
