  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 head of romaine lettuce, chopped
  • 1 cup green beans, trimmed
  • 2 medium tomatoes, quartered
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1 can (5 oz) tuna, drained
  • 2 hard-boiled eggs, quartered
  • ¼ cup black olives, pitted
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and blanch the green beans for about 2 minutes, then transfer to an ice bath to stop cooking.
  2. In a large salad bowl, combine the chopped romaine, tomatoes, cucumber, green beans, tuna, hard-boiled eggs, and olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and gently toss to combine.
  5. Serve immediately or chill for 30 minutes for enhanced flavor.

Notes
