Ingredients

- 1 rack of lamb, trimmed (about 1.5 lbs or 680 g)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix olive oil, garlic, rosemary, Dijon mustard, lemon juice, salt, and pepper.
- Rub the mixture all over the rack of lamb.
- Place the lamb in a roasting pan and roast for 20 minutes for medium-rare, or until desired doneness.
- Let the lamb rest for 5 minutes before slicing between the bones.
- Serve and enjoy!
