- 2 cups roasted red peppers (about 2 large peppers)
- 1 cup cream cheese (225 g), softened
- 1/2 cup sour cream (120 g)
- 2 tablespoons olive oil (30 ml)
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roast red peppers for 20 minutes until skin is blistered and charred.
- Let peppers cool, then peel and seed them.
- In a blender, combine roasted peppers, cream cheese, sour cream, olive oil, garlic, and lemon juice.
- Blend until smooth and creamy; season with salt and pepper to taste.
- Transfer dip to a serving bowl and chill for 30 minutes before serving.
Notes
- Serve with vegetable sticks, pita bread, or crackers.
- This dip can be made a day ahead for flavors to meld.
