- 2 cups dried navy beans (400 g)
- 1 lb (450 g) ham hock
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth (1.4 L)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Rinse the dried navy beans and soak them in water overnight, or use the quick soak method.
- Drain the beans and place them in the slow cooker with the ham hock, onion, carrots, celery, garlic, chicken broth, thyme, and bay leaf.
- Cover and cook on low for 8-10 hours or high for 4-6 hours until the beans are tender.
- Remove the ham hock, shred the ham, and return it to the soup. Discard the bay leaf.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add other vegetables like spinach or potatoes for extra flavor.
- This soup tastes even better the next day as the flavors meld together.
