- 2 lbs (900 g) beef chuck, cut into 1-inch pieces
- 8 oz (225 g) mushrooms, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups (960 ml) beef broth
- 2 cups (300 g) carrots, chopped
- 2 cups (300 g) potatoes, diced
- 2 tablespoons (30 ml) tomato paste
- 1 tablespoon (15 ml) Worcestershire sauce
- 1 teaspoon (5 g) dried thyme
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2 g) black pepper
- 2 tablespoons (30 g) flour (optional, for thickening)
Instructions
- In a slow cooker, combine the beef, mushrooms, onion, garlic, carrots, and potatoes.
- In a bowl, mix the beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour over the beef and vegetables.
- Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
- If desired, mix flour with a little water and stir into the stew 30 minutes before serving to thicken.
- Serve warm and enjoy your hearty meal!
