- 1 lb (450 g) beef stew meat, cubed
- 4 cups (960 ml) beef broth
- 2 medium carrots, diced
- 2 stalks of celery, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup (150 g) green beans, chopped
- 1 cup (150 g) potatoes, diced
- 1 can (14.5 oz or 410 g) diced tomatoes
- 2 teaspoons dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a slow cooker, add the beef stew meat and season with salt and pepper.
- Add the carrots, celery, onion, garlic, green beans, and potatoes.
- Pour in the beef broth and diced tomatoes, then stir in the thyme and oregano.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
- Taste and adjust seasoning before serving.
Notes
- Feel free to substitute vegetables based on your preference.
- For a thicker soup, reduce the amount of broth or add a cornstarch slurry before serving.
