Ingredients

- 2 lbs (900 g) beef chuck, cut into 1 inch cubes
- 4 slices of bacon, diced
- 1 large onion, chopped
- 2 carrots, sliced
- 2 cloves of garlic, minced
- 2 cups (480 ml) red wine
- 1 cup (240 ml) beef broth
- 2 tablespoons (30 g) tomato paste
- 1 teaspoon (5 g) dried thyme
- 2 bay leaves
- 8 oz (225 g) button mushrooms, halved
- Salt and pepper to taste
Instructions
- In a skillet, cook the diced bacon until crispy. Remove and set aside, leaving the fat in the skillet.
- In the same skillet, brown the beef cubes in batches. Transfer beef to the slow cooker.
- Add the bacon, onion, carrots, and garlic to the slow cooker.
- Pour in the red wine and beef broth, and stir in the tomato paste, thyme, and bay leaves.
- Season with salt and pepper, then add the mushrooms on top.
- Cover and cook on low for 7-8 hours or high for 4-5 hours until the beef is tender.
Notes
- Serve with crusty bread or over mashed potatoes.
- This dish tastes even better the next day as flavors meld.
