Ingredients

- 2 lbs (900 g) beef chuck roast, trimmed and cut into chunks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 cup (240 ml) red wine
- 2 cups (480 ml) beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, combine the beef, chopped onion, garlic, diced tomatoes, red wine, beef broth, tomato paste, oregano, basil, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 4-5 hours until the beef is tender.
- Once cooked, shred the beef with two forks and mix well with the sauce.
- Serve over cooked pasta and garnish with fresh parsley.
Notes
- For a thicker sauce, remove the lid during the last hour of cooking.
- Serve with crusty bread to soak up the sauce.
