Ingredients
Scale
- 2 lbs (900 g) beef chuck, cut into 1-inch (2.5 cm) cubes
- 4 medium carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups (960 ml) beef broth
- 2 tbsp (30 ml) tomato paste
- 2 tsp (10 g) dried thyme
- 1 tsp (5 g) dried rosemary
- Salt and pepper to taste
- 2 tbsp (30 ml) olive oil
Instructions
- In a large skillet, heat olive oil over medium heat and brown the beef cubes on all sides.
- Transfer the browned beef to the slow cooker along with carrots, potatoes, onion, garlic, beef broth, tomato paste, thyme, rosemary, salt, and pepper.
- Stir well to combine, cover, and cook on low for 8 hours or high for 4 hours.
- Before serving, taste and adjust seasoning if necessary.
Notes
- For a thicker stew, add 2 tbsp (16 g) cornstarch mixed with 2 tbsp (30 ml) water during the last 30 minutes of cooking.
- Serve with crusty bread for a complete meal.
