- 4 cups (600 g) fresh broccoli, chopped
- 1 cup (150 g) carrots, diced
- 1 onion, diced
- 4 cups (1 L) vegetable broth
- 2 cups (240 g) sharp cheddar cheese, shredded
- 1 cup (240 ml) heavy cream
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- In the slow cooker, combine broccoli, carrots, onion, garlic, vegetable broth, salt, pepper, and nutmeg.
- Cover and cook on low for 4 hours or high for 2 hours.
- Once the vegetables are tender, stir in the heavy cream and shredded cheese.
- Blend the soup until smooth using an immersion blender or by transferring to a regular blender in batches.
- Serve warm, garnished with extra cheese or croutons if desired.
Notes
- For a thicker soup, blend more of the vegetables.
- Feel free to add other vegetables like potatoes or cauliflower for variation.
