- 1 cup (240 ml) milk
- 8 oz (225 g) cream cheese, cubed
- 2 cups (200 g) shredded cheddar cheese
- 1 tsp (5 g) dried thyme
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Add diced potatoes, onion, garlic, and broth to the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until potatoes are tender.
- Add cream cheese and milk, then mash slightly for a creamy consistency.
- Stir in shredded cheddar cheese and season with thyme, salt, and pepper.
- Garnish with sliced green onions before serving.
Notes
- For a thicker soup, blend a portion of the soup before adding cheese.
- Feel free to add cooked bacon for extra flavor.
