- 2 lbs (900 g) boneless chicken thighs
- 8 oz (225 g) sliced mushrooms
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a slow cooker, add chicken thighs, mushrooms, onion, garlic, and thyme.
- In a separate bowl, mix chicken broth, heavy cream, soy sauce, salt, and pepper.
- Pour the mixture over the chicken and vegetables in the slow cooker.
- Drizzle olive oil on top.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Stir before serving and adjust seasoning if needed.
Notes
- Serve over rice or pasta for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
