- 1 lb (450 g) boneless, skinless chicken breasts
- 8 oz (225 g) sliced mushrooms
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 g) dried thyme
- Salt and pepper to taste
- 2 tbsp (30 g) fresh parsley, chopped (for garnish)
Instructions
- In a slow cooker, add the chicken breasts, mushrooms, onion, and garlic.
- Pour in the chicken broth, then sprinkle with thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the slow cooker.
- Stir in the heavy cream and let it heat for an additional 20 minutes before serving.
- Garnish with fresh parsley before serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- You can add vegetables like carrots or peas for extra nutrition.
