- 1 lb (450 g) boneless, skinless chicken breasts
- 2 cups (300 g) frozen corn
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups (480 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon fresh thyme or 1 teaspoon dried thyme
- 1 cup (150 g) diced potatoes
- 1/4 cup (60 g) chopped fresh parsley for garnish
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the corn, onion, garlic, chicken broth, cream, salt, pepper, paprika, thyme, and diced potatoes.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the chowder, stirring well.
- Garnish with fresh parsley before serving.
Notes
- Serve with crusty bread for a complete meal.
- This chowder can be frozen for up to 3 months; just reheat gently.
