- 1 lb (450 g) boneless chicken breasts
- 4 cups (960 ml) chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups (60 g) fresh spinach
- 1 cup (150 g) carrots, sliced
- 1 cup (150 g) celery, diced
- 1 tsp (5 g) dried thyme
- 1 tsp (5 g) dried basil
- Salt and pepper to taste
- 2 tbsp (30 ml) olive oil
Instructions
- In a slow cooker, add the chicken breasts, diced onion, minced garlic, carrots, celery, thyme, and basil.
- Pour the chicken broth over the ingredients, then stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, remove the chicken, shred it, and return it to the soup.
- Stir in the fresh spinach and cook until wilted.
- Season with salt and pepper to taste before serving.
Notes
- Feel free to add other vegetables like potatoes or green beans.
- This soup freezes well; store in airtight containers for up to 3 months.
