Ingredients

- 1 lb (450 g) boneless, skinless chicken breast
- 2 cups (480 ml) chicken broth
- 1 can (15 oz or 425 g) white beans, drained and rinsed
- 1 cup (150 g) diced carrots
- 1 cup (150 g) diced celery
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cups (60 g) fresh spinach
- Juice of 1 lemon
Instructions
- Place the chicken breast in the slow cooker and add chicken broth, white beans, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Remove the chicken, shred it with two forks, and return to the slow cooker.
- Add the fresh spinach and lemon juice, stirring until the spinach wilts.
- Serve hot, and enjoy!
Notes
- For added flavor, sauté the onions and garlic in a pan before adding them to the slow cooker.
- Leftovers can be stored in the refrigerator for up to 3 days.
