- 1 lb (450 g) boneless, skinless chicken breasts
- 1 cup (200 g) wild rice, rinsed
- 1 medium onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups (1.5 L) low-sodium chicken broth
- 1 cup (240 ml) heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a slow cooker, heat the olive oil and add the onion, carrots, celery, and garlic. Sauté for about 5 minutes.
- Place the chicken breasts on top of the vegetables.
- Add the wild rice, chicken broth, thyme, parsley, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, remove the chicken, shred it, and return it to the soup.
- Stir in the heavy cream and cook for an additional 15 minutes.
- Adjust seasoning as needed and serve hot.
Notes
- For a healthier option, use half-and-half instead of heavy cream.
- Feel free to add spinach or kale for extra greens.
