- 2 lbs (900 g) boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 1 cup (240 ml) chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Place the sliced bell peppers and onion in the bottom of the slow cooker.
- Season the chicken breasts with fajita seasoning, salt, and pepper, then place them on top of the vegetables.
- Pour the chicken broth and olive oil over the chicken.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- Once cooked, shred the chicken with two forks and mix everything in the slow cooker.
- Serve warm with tortillas or over rice, topped with your favorite toppings.
Notes
- For added flavor, marinate the chicken in fajita seasoning for a couple of hours before cooking.
- Serve with avocado, sour cream, or cheese for extra richness.
