- 2 lbs (900 g) boneless, skinless chicken breasts
- 1 can (10 oz / 280 g) diced green chiles
- 1 cup (240 ml) chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup (120 g) shredded cheese (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- Add the chopped onion, minced garlic, diced green chiles, chicken broth, cumin, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix back into the sauce.
- If desired, top with shredded cheese and let it melt before serving.
Notes
- For extra heat, add chopped jalapeños or a dash of hot sauce.
- Serve with rice, tortillas, or over a salad for a complete meal.
