Ingredients

- 2 lbs (900 g) beef chuck, cut into 1-inch cubes
- 2 onions, diced
- 3 cloves of garlic, minced
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 1 bell pepper, diced
- 2 cups (480 ml) beef broth
- 1 can (14 oz or 400 g) diced tomatoes
- 2 tablespoons tomato paste
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, brown the beef cubes over medium-high heat, then transfer to the slow cooker.
- Add onions, garlic, paprika, caraway seeds, bell pepper, beef broth, diced tomatoes, and tomato paste to the slow cooker.
- Stir well, season with salt and pepper, and cover.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the goulash in the last 30 minutes of cooking.
- This goulash pairs excellently with crusty bread or over egg noodles.
