- 1 cup (200 g) dried green or brown lentils
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz or 400 g) diced tomatoes with juice
- 4 cups (1 L) vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 bay leaf
- 2 cups (150 g) fresh spinach (optional)
Instructions
- Rinse the lentils under cold water and drain.
- In the slow cooker, combine lentils, onions, garlic, carrots, celery, diced tomatoes, vegetable broth, cumin, thyme, bay leaf, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until lentils are tender.
- If using spinach, stir it in during the last 10 minutes of cooking.
- Remove the bay leaf before serving. Taste and adjust seasoning as needed.
Notes
- For a spicier soup, add a pinch of red pepper flakes.
- This soup freezes well, store in airtight containers for up to 3 months.
