Ingredients

- 2 lbs (900 g) oxtail
- 1 cup (240 ml) red wine
- 4 cups (960 ml) beef broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp (30 ml) tomato paste
- 2 bay leaves
- 1 tsp (5 g) thyme
- Salt and pepper to taste
- 2 tbsp (30 ml) olive oil
Instructions
- In a skillet, heat olive oil over medium-high heat and brown the oxtails on all sides.
- Transfer the browned oxtails to the slow cooker and add the onion, garlic, carrots, and celery.
- Pour in the red wine, beef broth, tomato paste, bay leaves, thyme, salt, and pepper.
- Cover and cook on low for 8 hours or until the oxtail is tender.
- Remove the bay leaves before serving. Enjoy your stew!

- Serve with crusty bread for a hearty meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
