- 3 lbs (1.4 kg) beef chuck roast
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 cups (480 ml) beef broth
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp Worcestershire sauce
Instructions
- Season the beef chuck roast with salt and black pepper.
- Heat a skillet over medium-high heat and sear the roast on all sides for about 3-4 minutes per side.
- In the slow cooker, place the carrots, potatoes, onion, and garlic.
- Place the seared roast on top of the vegetables.
- Pour in the beef broth and Worcestershire sauce, then sprinkle thyme over the top.
- Cover and cook on low for 8 hours or until the meat is tender.
Notes
- For extra flavor, add fresh herbs like rosemary or parsley.
- Serve with crusty bread for a complete meal.
