- 1 cup split peas (200 g)
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth (960 ml)
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil (30 ml)
Instructions
- Rinse the split peas under cold water and drain.
- In a slow cooker, combine the split peas, onion, carrots, celery, garlic, vegetable broth, bay leaf, and thyme.
- Drizzle olive oil over the mixture and stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until peas are soft.
- Remove the bay leaf, then season with salt and pepper to taste before serving.
Notes
- For a creamier texture, blend a portion of the soup before serving.
- Add diced ham for extra protein and flavor if desired.
