Ingredients

- 2 lbs (900 g) ripe tomatoes, quartered
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 cup (240 ml) vegetable broth
- 1 cup (240 ml) heavy cream
- 1/4 cup (15 g) fresh basil, chopped
- 2 tablespoons (30 ml) olive oil
- Salt and pepper to taste
Instructions
- Preheat the slow cooker to the low setting.
- In a mixing bowl, combine the tomatoes, onion, garlic, and olive oil. Season with salt and pepper, and pour into the slow cooker.
- Add the vegetable broth and stir to combine.
- Cover and cook on low for 6 hours or high for 3 hours.
- Once cooked, blend the mixture until smooth using an immersion blender.
- Stir in the heavy cream and fresh basil. Adjust seasoning if necessary.
- Serve warm, garnished with extra basil if desired.
Notes
- Add a pinch of red pepper flakes for a spicy kick.
- Use low-fat cream for a lighter version of the soup.
