- 1 lb (450 g) boneless, skinless chicken breasts
- 1 can (15 oz, 425 g) white beans, drained and rinsed
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) frozen corn
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (4 oz, 115 g) green chilies
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 cup (120 ml) sour cream
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the white beans, chicken broth, corn, onion, garlic, green chilies, cumin, chili powder, paprika, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through.
- Shred the chicken directly in the slow cooker using two forks.
- Stir in the sour cream until well combined.
- Serve garnished with chopped cilantro.
Notes
- For extra creaminess, add more sour cream when serving.
- Can be served with tortilla chips or cornbread for a complete meal.
